Holidays predispose us to enjoy some tasty food to an excess. The days around Christmas and New Year seem to be competition for the most delicious dishes. Method: Beat the eggs and sugar, add the soft butter and milk. Once they are well mixed, put the other products in to achieve a homogeneous mixture. Put in muffin forms and bake in a preheated oven at 180 degrees for about 20 minutes. The pudding can be of any flavor you want, optionally add some nuts or coconut.

jam muffins

Airy muffins with jam

Ingredients: 4 eggs, 1 tea cup sugar, , ¾ tea cup vegetable oil, 2 tablespoons yogurt, 1 ¾ tea cup flour, 1 packet baking powder, pinch of salt, jam optional.

Preparation : Separate the egg yolks from the whites. Mix the yolks with sugar and the whites are beaten into snow. Mix the egg whites and yolks and gradually add yogurt and, oil to them.

Once well mixed, start adding the pre-mixed flour, salt and baking powder.

Put a spoonful of mixture in muffin trays and top with a teaspoon of jam - from blueberries, strawberries, cherries, whatever you have. Then add another tablespoon of the mixture. Bake the muffins as in the other two recipes - 20 minutes, in a moderately preheated oven.

The jam that you choose should not be very liquid. If you want, after you put a spoonful of mixture in the form, dye the remaining dough in the bowl with a tablespoon cocoa - so your cakes will have a different and interesting look.
