It is not necessary to have eggs in desserts in order for them to be tasty and light. You can easily prepare desserts without using eggs.

Cupcakes with apple stuffing, which are made without eggs, are a scrumptious dessert.

Ingredients: 14 oz of cottage cheese, 2 cups flour, 1 cup semolina, 1 cup sugar, 3 large apples, 3 tablespoons milk, 4 tablespoons of butter, a pinch of cinnamon, a pinch of salt.

Preparation: To prepare the dough, mix the cottage cheese, semolina, half the sugar, half the flour and salt. To this mixture, add the softened butter and milk. Knead the dough with your hands until it becomes elastic.

The apples are cut into pieces, mixed with the rest of the sugar. The dough is divided into 12 parts, each one is formed into a ball and rolled out so as to obtain a circle of a thickness of 0.2″ (0.5 centimeter).

If the forms for baking are made of silicon, do not brush with oil, but if they are metal, it is imperative to apply oil. The dough is placed in the cups/forms and any excess dough that sticks out from the edges is removed. Each cup gets apple stuffing. Bake for 25 min at 356°F (180 °C).

Cake with lemon zest is also made without eggs.

Ingredients: 1 cup semolina, 1 cup and a half of flour, 1 teaspoon baking soda, the juice of half a lemon, the grated rind of a lemon or orange, half a cup of sugar, 2/5 cup butter, 2/5 cup raisins, 1 cup yoghurt, oil for lubrication of the form.

Preparation: Soak the raisins in warm water for 2 hours. Drain. Meanwhile, mix all the dry ingredients together with the lemon zest. Add the butter and knead a dough that resembles crumbs.

Add a bit of yoghurt, lemon juice and the swollen raisins. Everything is mixed well and poured into a cake form, coated with butter. Bake for 40 minutes at 356°F (180 °C).

Fried bananas can also be prepared without eggs. This is a popular eastern dessert.

Ingredients: 2 bananas, can be covered with spots, a half cup of flour – if possible use rice flour, half a teaspoon of baking soda, some water and oil.

Preparation: Mix the flour with the baking soda and water to the consistency of cream. The bananas are cut lengthwise and then crosswise to produce four pieces. Dip each piece in crumbing and fry on both sides, drain on a paper towel and serve.
