The main courses for a given holiday during the cold months of the year are always well-thought-out and made with care but it is also good to have at least 2 salads accompanying them as well. Even if you end up having some left over, bean salad with onions, for example, is quite delicious even when not fresh. Here are the salads we have chosen:

Salad with red peppers and garlic

Ingredients: 14 red peppers, garlic to taste, 1 tsp mustard, 1 tbsp tomato paste, oil, salt, black pepper, walnuts - crushed.

Preparation: First, clean the garlic and chop it finely - leave it in a bowl. Add the mustard on top, tomato paste and 1 tbsp water. Stir well and season with salt, black pepper, oil.

Peppers

Roast the peppers - peel them and place them in the bowl. Leave them like this for a few hours. When serving, arrange peppers in a plate and pour the sauce over them. Sprinkle with crushed or milled walnuts.

The salad can also be made with fresh peppers but you must remove the seeds and caps and braise them in oil. Then put the peppers in the bowl with the sauce.

The next proposal is a bit different - we're talking about green bean salad. To make it you will need 1 can of green beans, a few onion heads, garlic to taste, vinegar, oil, salt.

Drain the green beans from the liquid and pour them in a bowl. Add finely sliced onions, chopped garlic and the spices. Toss well and let it cool in the refrigerator.

Our last proposal is quite unconventional - boiled salad. It can be served cold or warm - depending on the season. Here are the required products:

Ingredients: 4 red peppers, 4 eggplants, 17.5 oz tomatoes, 2-3 chili peppers, 2 onion heads, 3 garlic cloves, black pepper and salt.

Preparation: Cut up the onions and place them in a pot with oil on the stove. After they have braised a bit, add the sliced eggplants, peppers, chili peppers (without the seeds), tomatoes.

Throw in the garlic cloves too, as well as the rest of the spices. Close the pot and let the salad boil for about an hour. At the end, remove the lid so the water can boil off.
