Pancakes are among the most commonly made dough goodies that can be served at any time during the day, be either thin or thick, sweet or salted, wrapped into rolls or folded into quarters and so on.

It's not entirely clear who first came up with the idea for pancakes but it's a fact that they are popular all over the world, made in different ways and with different ingredients in the different countries. For example, in France and England they make them thinner, while in Russia and the US they are thicker.

In Asia they make them from coconut milk or bananas, while in Germany and the Scandinavian countries they use potato dough or grated potatoes. In Mexico, they have tortillas - very similar to pancakes, while in Russia they are called blini. There's no way to list all of the possible pancake recipes but here are some of the most popular:

1. French Pancakes

Ingredients: 1/3 cup flour, 3 1/3 tbsp cream, 3 1/3 tbsp milk, 2 egg yolks, 2 tsp sugar, orange zest, a pinch of salt.

Preparation: Combine all of the products, mix with a mixer and leave 30 min. to sit. Make pancakes from thus prepared pancake mix and if desired smear with a cream that's been prepared beforehand from butter, lemon and orange juice blended together.

2. Blini (Russia, Moldova, Ukraine)

Russian pancakes

Ingredients: 4 cups buckwheat flour, 4 1/2 cup milk, 1 2/3 tbsp yeast, salt to taste.

Preparation: Dilute the yeast with 1/2 cup warm milk, then add another 1 1/2 cup milk. While stirring nonstop, pour in half of the flour.

Cover the container with the mixed ingredients with a towel and let the dough rise, then add the remaining products, stir everything again and form blini, which are thicker than your standard pancakes.

3. Tortillas (Mexico)

Ingredients: 2 cups unrefined wheat flour, 3 tbsp butter, 2/3 cup water, 2 pinches of salt.

Preparation: Put the flour in a bowl and add the salt and butter to it. Begin kneading the dough, while very slowly adding the water as well.

Let it sit for 30 min., then make balls from it, roll them out with a rolling pin and put them on a hot Teflon pan, to toast on both sides.
