The other products needed for this summer delight aside from butterfly chicken breasts are tomatoes, pesto and cheese.

The chicken breasts need to be fresh and of high quality. The quantity depends on how many persons you're cooking for. The recipe listed uses 1 1/2 butterfly chicken breasts.

The tomatoes for this recipe need to be pink. They have more flavor and juice than other varieties. The pesto can be homemade or store-bought in a jar.

Ingredients: 2 bunches of basil, 3 garlic cloves, 4/5 cup olive oil, 2/5 cup pine nuts, 2/5 cup grated parmesan, salt, black pepper.

Preparation: Blend the basil and pine nuts in a blender. Add the garlic and blend once again until you get a smooth paste. Slowly pour in the olive oil a little at a time and stir well. Finally add the parmesan, salt and black pepper to taste. Stir until you get a homogenous mixture.

Cut the chicken breasts into 2 equal halves. Smear the oven dish with a little oil. Olive oil is not a good idea in this case since it gives a different taste to the dish. Arrange the chicken breasts on top.

Smear the meat thoroughly with pesto sauce. Cut the tomatoes into round slices and arrange them on top.

Heat the oven to the maximum temperature. Bake the oven dish with the steaks about 20 min. at 370°F (190 °C). Once the meat is nearly cooked on the outside, take it out and grate cheese over it. Put it back in the oven for 5-10 min.

Take out the dish and leave it to cool a little. Serve it on its own or with a garnish of fresh vegetables or baked potatoes.
