"Fresh spring spinach is all you need to whip up a nice lean spinach soup. You`ll forget all about lamb soup of any kind."

  • spinach - 21 oz (600 g)
  • carrots - 2
  • rice - 1/2 cup
  • tomato paste - 1 tablespoon
  • garlic - 2 cloves
  • paprika
  • oil
  • salt
  • flour

How to make

Clean and wash the spinach. Put a little oil to heat up in a pot. Chop the spinach and put it in to saute, while stirring periodically. Peel the carrots and garlic.

Chop them and add them to the spinach. Pour in 8 1/3 cups (2 L) hot water and once it heats up, pour in the rice. Heat oil in another pan and braise 1 tbsp flour in it.

Add the paprika and stir. Pour the roux over the spinach. Add the tomato paste, salt and stir. After 5 min., remove from the stove.
