Ingredients

  • brown rice - 1 cup (250 g)
  • zucchini - 1
  • carrots - 2
  • onions - 1
  • parsley - 1 bunch
  • thyme - 1 pinch
  • oil - 3 tablespoons
  • salt - to taste

How to make

Soak the brown rice in cold water for 12 hours, otherwise you'd need to boil them all day and they still won't be cooked.

Rinse, pour in new cold water and leave on the stove, use a 3:1 ratio.

After 25 min., it'll be ready, strain it. Heat oil in a pan, add the chopped onions, diced zucchini and the chopped into pieces carrots.

Sprinkle a little salt and pour in 2 tbsp (30 ml) and saute the vegetables, while stirring occasionally. Once they soften, add the strained rice and stir for 5 min. Sprinkle with thyme, salt to taste and fresh parsley.
