"Try a tastier and healthier moussaka - Spelt Moussaka."

Ingredients

  • spelt - 7 oz (200g)
  • spinach - 18 oz (500 g) can use dock
  • carrots - 1 large
  • onions - 1 bunch green
  • parsley - 1/2 bunch
  • spearmint - 1/2 bunch
  • feta cheese - 3.5 oz (100g)
  • eggs - 1
  • milk - 3 1/3 tbsp (50 ml)
  • salt
  • black pepper
  • paprika - to taste
  • for the topping
  • eggs - 4
  • flour - 1 tsp
  • yoghurt - 3 - 4 tbsp
  • milk - 2/5 cup (100 ml)
  • baking soda - a pinch

How to make

Heat the oil and saute the finely chopped carrots, then add the chopped onion and spinach.

Once the spinach shrinks, add the spelt which you've semi-boiled. Stir well, remove from the heat and add 1 cup cold water.

Separately, crumble or grate the feta cheese and mix with 1 egg and 3 1/3 tbsp (50 ml) milk. Add this mixture in to fry. Place everything in a greased tray and bake in a preheated 430°F (220°C) oven for about 40 minutes - until the liquid has evaporated.

Beat all the ingredients for the topping. Pour this over the moussaka with spelt and bake for about 10 more minutes.

Serve a piece of the spelt moussaka, garnished with yogurt.
