Ingredients

  • potatoes - 2 lb (1 kg)
  • green onions - 2 - 3 bunches
  • corn - 1 small can of sweet
  • for the sauce
  • yogurt - 3 tbsp strained
  • cream - 2 tablespoons
  • mayonnaise - 2 tablespoons
  • lemon juice - 1/2 lemon
  • salt
  • black pepper - ground, eyeball it
  • parsley - 1/3 bunch

Preparation

Boil the potatoes. Allow to cool, then peel them, cut them into cubes and pour them into a bowl. Add the chopped onions and drained corn.

Mix gently and salt to taste. Beat all ingredients for the sauce and pour the mixture over the potato salad.
