Ingredients

  • sprat - 2 lb (1 kg)
  • salt
  • flour - 4/5 cup (200 g) for rolling in
  • paprika - 3 1/3 tbsp (50 g)
  • olive oil - for smearing the tray

How to make

Clean the innards of the sprat and remove their heads. Wash and dry them. Salt.

Mix the flour with the paprika in a bowl.

Heat the tray up (its bottom needs to be absolutely dry), sprinkle with olive oil.

Roll each fish in the dry mixture and arrange in the tray without overlapping them.

Bake in a preheated 390°F (200°C) oven to a golden crisp.

Serve with fries, lemon and a cold beer.
