Ingredients

  • figs - 3.5 oz (100 g) dried, chopped
  • dried fruits - 9 oz (250 g) mix
  • blueberries - 3.5 oz (100 g) dried
  • cherries - 3.5 oz (100 g) candied, finely chopped
  • ginger - 1 - hunky, fresh, finely chopped
  • oranges - juice of 1 orange
  • flour - 1 cup (225 g) self - raising
  • sugar - 1 cup (225 g) brown
  • butter - 1 cup (250 g)
  • eggs - 4
  • molasses - 1 tablespoon dark, from fruits
  • apples - 1, peeled and grated
  • marsala - 2/5 cup (100 ml), or other liqueur wine
  • brandy - 2/5 cup (100 ml) can and rum or brandy
  • walnuts - 3 1/3 tbsp (50 g) chopped
  • cloves - 3 grains, ground
  • pepper - 1 pinch
  • cinnamon - 1 tablespoon
  • nutmeg - 1/2 tsp ground
  • jam - 4 - 5 tbsp apricot, for topping
  • couverture - white, to cover the cake, if desired

How to make

In a large bowl mix all the fruits and chopped ginger, orange juice, brandy and marsala /brandy/ rum. Let it stand for 1 night. Beat butter and sugar and gradually add 1 egg with 1 tablespoon flour.

Stir with all the eggs and flour and add all the spices. You should also add soaked fruit and juice and mix well. Finally, stir in the nuts, molasses and grated apple.

Prepare a taller baking tray with baking paper and gently grease it. Pour the mixture for this Christmas cake and then spread it evenly. Put to bake in a preheated oven at 300°F (150 °C) for about 3 hours, or until a when wooden skewer is stuck in the cake, it comes out clean.
