Ingredients

  • beans - 9 oz (250 g) white or colorful
  • carrots – 1
  • red peppers - 1 fresh or dried
  • onions - 1 head onion
  • mint - 1 tablespoon
  • parsley - 1/2 bunch
  • paprika - 1 tsp
  • oil - 4 - 5 spoons
  • salt - to taste

Preparation

Soak the beans the night before in water. The next day, drain and put to boil with new water. Change the water and boil again.

Reduce the heat and boil for 30-40 minutes. Add chopped, onion, carrot and red pepper to the oil. A little later, add the spices and boil for an hour, until the beans are cooked.

Serve a bowl of classic bean soup with chopped fresh parsley.
