Ingredients

  • eggs - 2
  • sugar - 1 1/2 cups
  • cottage cheese - 1/2 cup
  • dark chocolate - 3.5 oz (100 g)
  • butter - 1/2 cup (125 g)
  • milk - 1/2 cup
  • cocoa - 1 cup
  • flour - 1 cup
  • baking powder - 1 packet
  • vanilla - 1 tsp essence
  • strawberries - about 20, cleaned
  • for the ganache
  • dark chocolate - 3.5 oz (100 g)
  • cream - 2/5 cup (100 ml) liquid
  • butter - 1 lump about the size of a walnut
  • for the frosting
  • butter - 1/2 packet
  • white chocolate - 7 oz (200 g)
  • mascarpone - 1 1/5 cups (300 g)

How to make

Melt the chocolate and butter in a water bath. Add the milk, and cocoa to it and mix well. Beat the cottage cheese with a mixer in a bowl into a smooth mixture and add two eggs and sugar. While stirring, add the chocolate to the mixture.

Finally, mix with the vanilla, flour and baking powder. Optionally you can add a handful or two of raisins or other dried fruit. Pour the mixture into a baking dish, covered with baking paper. Put to bake in the preheated oven.

The brownies need to remain thick, moist and sticky in consistency. When poked in the middle, the fork needs to come out with crumbs.

For the ganache, heat the cream without boiling and add the broken chocolate and butter. Stir into a uniform mixture. Pour over the baked brownies and leave them to cool and set.

Meanwhile melt the white chocolate and butter in a water bath, if necessary add some water. Once the mixture has cooled slightly, beat it well with the mascarpone. Put the white frosting in a pastry bag.

Cut the brownies into squares. On each, squeeze out a bit, top with a berry and finish off with a little more frosting. That is how you form Santa Clause hats.
