"There is something irresistible about a combination of eggplants, cheese and tomatoes baked in the oven!"

Ingredients

  • eggplants - 3 - 4 large eggplants
  • tomatoes - 3 - 4 average sized ones
  • carrots - 1
  • parsley - 1 bunch
  • feta cheese - 7 oz (200 g) - 11 oz (300 g)
  • cheese - 7 oz (200 g)
  • garlic
  • oil - for frying

How to make

Cut the eggplants length-wise, salt them and let them drain, then wash them with warm water and fry them in hot oil.

Arrange them on a plate, coat each piece of eggplant with feta cheese to which you've added pressed garlic and chopped parsley. Put a round tomato slice on top, grate cheese and bake for a bit in the microwave or on a grill.

Once ready, put some coarsely grated carrot and parsley on top. Enjoy!
