  • beef fillet - 32 oz (900 g)
  • oil
  • whiskey - 6 tbsp
  • broth - 2/3 cup (150 ml) beef, or use water
  • black pepper - 2 tsp of green peppercorns + ground black pepper
  • cream - 2/3 cup (150 ml)
  • salt

How to make

Remove excess fat from the steaks and cut them into 4 pieces. Lightly brush the pan with oil and put it on high heat. When the oil begins to smoke, place the steaks in the pan.

Fry for 3 minutes on each side, occasionally lifting them, to prevent them from sticking. Pour the whiskey over the steaks and fry them for a few more minutes. Remove them from the pan, put them in a plate, in a warm area.

Put the broth or water into the pan, add the black pepper peppercorns and cream. Season and simmer for a few minutes, stirring constantly. To the sauce, add the juices released by the steaks. Soak the steaks with the resulting sauce.
