Ingredients

  • goat - about 2.2 lb (1 kg)
  • onions - 2 heads
  • oil - 1 cup
  • potatoes - 14.1 oz (400 g)
  • zucchini - 10.6 oz (300 g)
  • green beans - 14.1 oz (400 g)
  • aubergines - 7 oz (200 g)
  • peppers - 8.8 oz (250 g) peppers
  • okra - 7 oz (200 g)
  • grapes - 3.5 oz (100 g) green
  • parsley - 1/2 bunch, choppedr
  • ed pepper - 1/2 tsp
  • black pepper
  • salt
  • eggs - 4

Preparation

Cut the goat into pieces. Season it with salt and pepper. Put it together with 2 finely chopped onions to boil with a little water. As water evaporates, add the oil.

Sauté until soft, then pour it into the stew. Add peeled and cut into rings potatoes, chopped zucchini, green beans, which are pre-cleaned and steamed until tender, diced eggplant, okra, and green grapes.

Sprinkle it all with chopped parsley, pepper and paprika and salt to taste, stir gently and put a lid on, to bake for about two hours in a moderate oven. Before you pour it out, add the beaten eggs and bake until tight.
