Ingredients

  • flour - 6 cups (700 g)
  • yeast - 1 2/3 tbsp (25 g) fresh or 1 tbsp (15 g) dried
  • salt - 1/2 tsp
  • honey - 1 tsp
  • olive oil - 4 tbsp
  • basil - 2 sprigs to decorate
  • for the crust
  • spices - 1 tsp mixture of dried herbs
  • bacon - 4 slices chopped smoked bacon without rind
  • tomatoes - 1 tbsp dried
  • olives - 12, pitted
  • olive oil - 1 tbsp

How to make

Preheat the oven to 430°F (220 °C). Dissolve the yeast in 1 cup of water and add the honey. When the yeast rises, add it to the flour along with the salt, olive oil and 2 1/2 cups (600 ml) lukewarm water.

Knead until the dough is smooth and elastic. If necessary, add a little more flour. Leave it to rise for 1 hour to double its volume. Then knead it again. Roll it out in a large circle onto a pizza pan or baking tray.

Brush with tomato sauce and sprinkle with green herbs, olives and tomatoes. Finally, brush it with olive oil. Leave to rise for 15 minutes. Bake for 30 minutes, until browned and crispy. Garnish with basil leaves and serve.
