Soak the gelatin in 2-3 tablespoons of lukewarm water and let it swell. Dissolve the sugar in hot water, add the gelatin and boil on low heat to dissolve without bubbling. Add in a trickle of white wine.

Add the vanilla sugar and citric acid (which are dissolved in 1 tablespoon of water) and mix. Remove from the heat and pour into suitable cups.

You can add fresh fruit to taste. Put the cups in a refrigerator for a few hours and let them tighten. Serve them inverted onto a plate.
