  • potatoes - 9 oz (250 g) boiled and grated
  • sugar - 1/2 cup (125 g)
  • butter – 2 2/3 tbsp (40 g)
  • milk - 1 tablespoon
  • eggs - 1 egg yolk
  • marmalade
  • eggs – to spread


Mix potatoes, sugar and fresh butter and rub until they crumble. Add salt, milk, the egg yolk and knead into dough. Divide it into pieces and roll them. Cut them into squares.

Put a little jam on some of the corners and roll it to the opposite corner. Shape the buns and arrange them in a greased tray - best laid out with baking paper.

Coat the scones with beaten egg and bake them in a moderate oven. Serve them sprinkled with sugar.
