Ingredients

  • lentils - 4/5 cup (200 g)
  • butter - 3 1/3 tbsp (50 g)
  • onions - 2 oz (50 g)
  • flour - 1 tbsp (15 g)
  • tomato paste - 1 tbsp (15 g)
  • carrots - 2 oz (50 g)
  • celery - 2 oz (50 g)
  • salt
  • savory
  • vinegar
  • garlic - 4 - 5 cloves

How to make

Clean and wash the lentils. Put them to boil. To the boiling lentils, add celery (root). Boil until soft. Add more water if needed.

Once the lentils soften, make a roux from the chopped onions, place them in heated oil in a pan on the stove. Stew the onions until they start to look glassy.

Add the flour and after it turns golden, add the tomato paste. Mix the resulting mixture with broth from the lentils, until diluted. Pour it into the soup.

Once it comes to a boil again, add whole or chopped garlic cloves. Add a few savory sprigs to the soup and serve.
