Ingredients

  • peppers - 22 lb (10 kg)
  • salt - 1 2/3 cups (400 g)
  • water - 2.5 gal (10 l)
  • tartaric acid - 2/5 cup (100 g)

Preparation

Select suitable peppers, wash them, and prick each one with a fork.

Put them in a container, press down with a weight and pour on the brine made from the aforementioned products.
