"Some believe it to be sacrilege to make meatballs without mince but these easy spinach meatballs are going to make you change your mind"

Ingredients

  • spinach - 2 lb (1 kg)
  • potatoes - 5 boiled, grated
  • oil - 5 tbsp
  • eggs - 2
  • flour - 2 tbsp, if the mixture is runny
  • parsley - 1 bunch, chopped
  • salt - to taste
  • black pepper - to taste
  • paprika - 1 tsp
  • breadcrumbs - for rolling, or use flour

How to make

The cleaned and chopped spinach is stewed in preheated oil. Once it shrinks, remove it from the heat and add the grated potatoes, beaten eggs, chopped parsley and spices to it.

If necessary, thicken with 2 tablespoons of flour. With greased hands, form meatballs, roll them in flour or breadcrumbs and fry to a nice even tan.
