Ingredients

  • chicken breasts - 6
  • salt - 1/2 tsp
  • black pepper - ground
  • olive oil - 2 tablespoons
  • onions - 1 head, cut into round slices
  • peppers - 1 red pepper, cut into chunks
  • garlic - 3 cloves, chopped
  • tomatoes - 14 oz (400 g) canned
  • chicken broth - 1 cup (250 ml)
  • basil - 1 tablespoon, finely chopped, fresh
  • rice - 2/3 cup (150 g), white
  • mushrooms - 10.5 oz (300 g)
  • olives - 4.5 oz (120 g)

How to make

Add salt and black pepper to the chicken, then fry it in a little oil for a few minutes. In a large saucepan, put the onion and peppers to braise for 3 minutes, add the garlic, then the chopped mushrooms. Once softened, add the tomatoes and 2-3 tablespoons of tomato juice.

Add the broth and salt. Again, sprinkle with black pepper and bring it to a boil. Then add the rice and once it starts boiling, reduce the heat and close with a lid for about 10 minutes.

Put the meat back in the pan with the sauce, leave it for another 10 minutes to stew. Finally, add the chopped olives and basil.
