"Sauerkraut Wraps are so typically Bulgarian. Following this train of thought, heres an unbelievable recipe for them in a clay pot"

Ingredients

  • sauerkraut - 1 head
  • mince - 17.5 oz (500 g)
  • carrots - 2, grated
  • mushrooms - 6, cleaned and finely chopped
  • rice - 1 2/3 cups (400 g), washed and drained
  • leeks - 2 bunches or 2 heads
  • tomato paste - 3 - 4 tablespoons
  • parsley - a few chopped sprigs
  • black pepper
  • paprika
  • salt
  • savory - crumbled
  • oil - 1 cup
measures

How to make

Separate the leaves of the sauerkraut and crop them if necessary to make them easy to roll. Preheat oil in a deep pot and successively fry the chopped leeks, grated carrots, then the mushrooms. Once stewed, add the minced meat and stir, until it is fried as well.

Add the tomato paste, spices to taste and the drained rice. Stir and stew until the liquid is absorbed by the rice. Prepare the clay pot, lightly grease it and on the bottom, place a few sauerkraut leaves. Arrange the sauerkraut wraps on top of them.

Pour in hot water to submerge the wraps. Put the lid on and let it bake in a cold oven at 390°F (200 °C) for 1 hour.
