Ingredients

  • water - 1 2/3 cups (400 ml) warm
  • yeast - 1 1/3 tbsp (20 g) fresh
  • sugar - 1 tablespoon
  • olive oil - 2 tablespoons, or oil
  • lemon juice - 1 tablespoon, or use vinegar
  • salt - 1 tsp
  • flour - 3 1/3 cups (800 g)

How to make

Dissolve the yeast in 2/5 cup (100 ml) of hot water and mix it with the sugar. Allow it to activate for 15 minutes. In a large bowl, add the remaining water, oil, vinegar or lemon juice and mix with the yeast. Gradually add flour while stirring, and finally knead a soft dough on the kitchen counter, by adding a little flour.

Transfer it to greased bowl, cover and leave it to rise for about 1 hour. Then divide the dough into 2 equal parts. Spread one out in a greased tray, and use the other to make locks, wreaths or any other decoration imaginable along the periphery.

Allow the prepared pita to rest for 10 minutes and put it to bake in a preheated oven at about 340°F (170 °C) to full readiness. While still warm, brush the meatless sweet pita with the mixed together sugar, water and oil.
