Ingredients

  • chicken - 1 whole
  • salt
  • black pepper - ground
  • wine - 2/5 cup (100 ml) red + 2/5 cup (100 ml) white
  • rosemary
  • thyme
  • garlic - 2 crushed cloves
  • leeks - 1
  • mushrooms - 10.5 oz (300 g)
  • corn - 2 tablespoons
  • pickles - 2
  • mustard - 2 tablespoons
  • feta cheese - 7 oz (200 g), melted
  • cheese - 5.5 oz (150 g)

How to make

The whole chicken is deboned completely. The result should be a large piece of chicken that is placed in a container. Rub it with salt, black pepper, sprinkle it with rosemary and thyme, pour the wine and leave it for half an hour.

Fry the chopped leek, garlic and finely chopped mushrooms. Stew until nice and soft, then flavour it with salt and pepper.

Spread the marinated chicken with a little mustard and melted feta cheese, distribute the fried vegetables. If there are too many, do not put all of them in.

On top, arrange slices of pickles, corn, cheese slices and brush them with melted feta cheese again. Carefully turn the chicken into a roll and secure it with toothpicks or wrap it with thread.

Transfer the roll to a greased pan and add a little oil and another 2/5 cup (100 ml) of wine. Put it to bake in foil for 45 minutes in a heated oven. Remove the foil, pour the juice over it and return it to the oven to bake until finished.

Once it's almost ready, remove it, smear it with a little melted feta cheese and sprinkle with cheese. Put it back in until it gets a nice tan.
