Ingredients

  • eggs - 1 yolk
  • mustard - 1 tsp
  • lemon juice - 1 tsp
  • oil - 1 cup (250 ml), approximately
  • black pepper
  • salt

Preparation

All products have to be at room temperature. Combine the egg yolk, mustard and lemon juice and stir well with a whisk.

Stir constantly, add the oil drop by drop. The sauce will start to thicken slowly. Continue in this fashion until the sauce reaches the desired thickness.

Lastly, add salt and pepper to taste. This mayonnaise is perfect for fries.
