Ingredients

  • rice - 4/5 cup (200 g)
  • carrots - 1 cup, grated
  • leeks - 1 cup, chopped
  • peppers - 1 green and 1 red, chopped
  • feta cheese - 1 cup, crumbled
  • cheese - 3.5 oz (100 g) grated
  • eggs - 1
  • parsley - 1/2 chopped bunch
  • black pepper
  • salt
  • breadcrumbs - for crumbing
  • eggs - for crumbing
  • oil - for frying

How to make

Pre-soak the rice in cold water, then drain it well. Chop the leeks, grate the carrots and chop the peppers. Put them to stew in oil, and when soft, add the rice. Mix well and add a pint of boiling water, salt and leave to boil.

Let the cooked rice cool, then mix it with one egg, crumbled feta cheese, chopped parsley and black pepper. Shape medium sized patties from the blend and heat the oil in a frying pan. Each patty is rolled in some egg, breadcrumbs and egg again.

Fry until they take on a golden tan.
