  • chicken - 1 whole
  • mascarpone - 4 tablespoons
  • salt
  • rosemary - 2 tablespoons of leaves
  • black pepper
  • olive oil - 2 - 3 tablespoons
  • lemon juice - of 1 lemon


Cut the cleaned chicken along the breastbone and make as many slices on its back as possible. Mix the mascarpone with salt, rosemary and pepper and fill the chicken slices with this mixture and spread the rest on the bottom part.

Heat the olive oil and fry the chicken on both sides, until browned. Transfer it to a tray and put it to bake. Mix the remaining cheese and lemon juice in the tray and boil them to thicken. Treat the chicken with the prepared sauce.
