Ingredients

  • basil - 2 large bunches
  • pecorino - 7 oz (200 g) (or other sheep's cheese)
  • parmesan - 2 oz (60 g)
  • pine nuts - 2/5 cup (100 g) or walnuts
  • garlic - 3 cloves
  • olive oil - 1 cup (250 ml)
  • salt - to taste

How to make

Toast the pine nuts in a pan without oil until they begin to give off an aroma. Wash and dry the basil. Peel the garlic.

Puree these ingredients together and then add a trickle of olive oil while pureeing nonstop. Season with salt and refrigerate.

Add the grated cheeses and pound in a mortar.

Genovese pesto is suitable for pasta, salads, or as a condiment for toast.
