Ingredients

  • pork - 5.5 lb (2.5 kg) sirloin or other large piece of meat without a bone
  • garlic - 4 cloves
  • parsley - 1/2 bunch, chopped
  • thyme - 1 tablespoon
  • salt
  • black pepper
  • wine - 1 cup
  • mustard - 1 tbsp
  • bacon - 7 oz (200 g)
  • mushrooms - 7 oz (200 g)
  • eggs - 2 boiled
  • onions - 1 head
  • carrots - 1 small, grated
  • oil
  • brandy - 3 1/3 tbsp (50 ml)

How to make

Take the piece of pork meat and form it into 1 large sheet, by cutting it with a knife gradually. Slide the knife along the meat smoothly. Rub thus prepared meat with the spices and pressed garlic.

Spread it out in the tray, in which you will bake it and add the wine over it. Allow it to sit a bit while preparing the filling. Heat a little oil and first fry the chopped bacon briefly, then add the chopped onion, grated carrots and chopped mushrooms. Stir and once tender, season with spices.

Smear the meat with the mustard, place the stuffing evenly on top and make a tight roll. Wrap the entire roll with thread, to prevent it from falling apart during baking. Pour 3 1/3 tbsp (50 ml) of brandy over it, brush it with a little oil and add some water to the tray.

Place the meat loaf with the filling to bake in foil for 2 hours in a moderately heated oven. Serve with a side of salad or marinated grilled vegetables.
