Ingredients

  • apples - 21 oz (600 g)
  • almonds – 1/2 cup (125 g)
  • sugar - 2/5 cup (100 g)
  • butter - 1/3 cup (80 g)
  • lemons - 1/2
  • eggs - 2
  • flour - 2 tbsp (30 g)

Preparation

Peel the apples, remove their cores and cut them into thin slices. Boil 1 tablespoon of sugar in 2/5 cup (100 ml) of water. In thus obtained syrup, sauté the apples.

Whip the butter with the remaining sugar, yolks, flour, juice and rind of half a lemon and the chopped almonds. Beat the egg whites into snow and carefully add them to the remaining mixture.

Coat a fireproof container with butter and arrange the apples on the bottom. Pour the mixture on top. Bake the cake on low heat for 45 min.
