  • milk - 4/5 cup (200 ml)
  • yeast - 1 1/3 tbsp (20 g) fresh
  • flour - 2 cups (500 g)
  • water - 2/3 cup (150 ml) warm
  • feta cheese - 7 oz (200 g)
  • olive oil - 6 tablespoons + more for coating the dough
  • butter - 1 - 2 tablespoons
  • sugar - 1 tsp
  • salt - 1 tsp


The yeast and sugar are dissolved in warm milk. The dish is covered and allowed to stand for 10-15 minutes until it activates.

In a well in the sifted flour with salt, add the yeast, olive oil, and hot water. Gradually knead a smooth dough. Put it in a greased bowl, cover it with a cloth and leave it in a warm place to rise until doubled in volume.

Once risen, the dough is rolled into a sheet and dabbed with olive oil, sprinkled with crumbled feta cheese and rolled up. From the roll, cut out identically sized pieces. These buns are then placed in a greased tray and put in a cold oven.

Bake the feta cheese buns for about 30 minutes at 356°F (180 °C). Brush the hot buns thoroughly with butter.
