Ingredients

  • chicken breasts - 7 oz (200 g)
  • lemon juice - 2 tablespoons
  • salt - 1 tsp
  • olive oil - 3 tablespoons
  • potatoes - 10 small
  • tomatoes - 2
  • parsley - 2 - 4 bunches, or basil
  • olives - a few, black
  • onions - 1 head
  • for the dressing
  • garlic - 1 clove
  • capers - 1 tablespoon, or green olives
  • anchovies - 2 fillets
  • mayonnaise - 2 tablespoons
  • mustard - 2 tablespoons
  • yoghurt - 4 - 5 tablespoons
  • vinegar - to taste
  • black pepper - to taste

How to make

Cut the chicken into fragments. Season them to taste with salt and pepper and marinate them in lemon juice for 20 minutes. Then fry them in a little heated olive oil and let them cool.

In the meantime, put the potatoes to boil. Then rinse them under cold water, peel them and let them cool. Cut the potatoes into a bowl, add the chopped onions, tomatoes, parsley, black olives.

Mix all the ingredients for the dressing with the anchovies and capers. Pour the dressing over the salad, season with a little salt, pepper, stir and serve.
