  • flour - 1 2/5 cups (350 g)
  • eggs - 2 egg yolks and 2 egg whites
  • butter - 4/5 cup (170 g) fresh
  • powdered sugar - 1/5 cup (70 g)
  • yeast - 2 tsp (10 g)
  • breadcrumbs - 1/2 cup or crushed rusks
  • fruits - 2 cups (500 g) sour cherries, cherries, etc..
  • sugar - 2/3 cup (150 g), for the fruits + 1/2 cup for the egg whites


Knead a dough from the flour, egg yolks, butter, powdered sugar and yeast. Wrap it in oiled paper and let it cool for 2-3 hours. Then spread it out into a greased and floured baking tray and put it to bake until golden in color.

Clean the fruits of pits, sprinkle them with sugar and let them stand for 1 hour. Sprinkle the baked tart with rusks, distribute the fruits with sugar on top and the egg whites, beaten to snow with 1/2 cup sugar.

Return it to the oven to bake until the egg whites turn pink.
