"You can make phyllo pastries with ready-made phyllo pastry sheets but they taste best when rolled out by hand."

Ingredients

  • flour - 2 lb (1 kg)
  • eggs - 2
  • salt - 1/3 tsp
  • sugar - 2 pinches
  • yeast - 1/4 cube
  • water - slightly warm, for the yeast
  • yoghurt - 4/5 cup (200 g)
  • cottage cheese - 9 oz (250 g), or feta cheese

How to make

Dissolve the yeast in a little warm water with the sugar. Add all the remaining products without the cottage cheese and oil and knead a soft dough, let it rest for 30 minutes.

Tear identical pieces from the dough and roll them out into very thin sheets to the desired size for the pies. Put one sheet in a greased tray, smear with oil, sprinkle it with a little cottage cheese, add the next sheet on top. Repeat until you lay 4-5 sheets. Allow them to rest again briefly and put the pies in a preheated oven.

Bake until browned and then spray them with a little water and smother with a towel.
