"Stuffed peppers are no longer just an ordinary country dish! Nowadays they`re a mouthwatering cold appetizer that impresses."

Ingredients

  • peppers - 4 red
  • rice - 1 cup
  • eggs - 2
  • yogurt - 1/2 cup
  • oil - 3 tablespoons
  • olives - 20
  • tarragon
  • salt

How to make

The peppers are cut in half lengthwise and cleaned of stems and seeds. Fry them in a pot with the oil until golden.

Make a stuffing by mixing the previously boiled rice, mashed yolks of the boiled eggs, cleaned from pits olives, chopped tarragon, yoghurt and salt.

The peppers are filled with this stuffing. Serve cold.
