Dairy Mayonnaise

  • milk - 2/5 cup (100 ml)
  • oil - 4/5 cup (200 ml)
  • salt - 1/2 tsp
  • sugar - 1/2 tsp
  • mustard - 1 tsp, by choice
  • citric acid - 1/3 tsp


In a suitable container, mix the milk, oil, salt, sugar and citric acid (or lemon juice). All the products must be at the same room temperature.

Put them at the bottom of the blending container and start whipping first at a low, then at a higher speed and smoothly pull up the blender.

Once the mayonnaise has thickened, add the mustard. Whip the dairy mayonnaise some more and refrigerate it. Optionally, you can add different spices and garlic powder.
