Cut the eggplants into round slices, salt them and leave them to drain their bitterness for 15-20 min.

Wash them under running water and dry them with a towel. Lightly whisk an egg. Roll the eggplant circles in the egg and breadcrumbs. Fry the circles in hot oil on both sides until golden.
