"Swallow your fear - making a superb pheasant in the oven is not at all hard!"

Ingredients

  • pheasants - 1
  • carrots - 2
  • onions - 9 oz (250 g) small heads
  • garlic - 1/2 head
  • mushrooms - 3.5 oz (100 g)
  • white wine - 2 cups
  • olives - 10
  • salt
  • black pepper
  • bay leaf

How to make

Boil the pheasant for 20 minutes. Cut it into pieces and arrange it in a baking dish. Add onions, chopped carrots, chopped mushrooms, whole garlic cloves, the spices and white wine.

Wrap in foil and leave in the oven at 360°F (180 °C) for about 1 hour. Shortly before it is ready, add in the olives and bake without the foil.
