"Tigers may be endangered but this tiger cake is not - so eat up while it`s still warm."

Ingredients

  • chocolate - 4 oz (100 g) (2 oz (50 g) for the cake and 2 oz (50 g) for the glaze)
  • eggs - 4
  • sugar - 1 cup + 2 tablespoons
  • cream - 1/2 cup (120 ml) or use 1/2 cup yoghurt
  • flour - 1 2/3 cup
  • baking powder - 2 tsp
  • butter - 1/2 cup (125 g) melted and cooled
  • oranges - 1 tablespoon zest + 1 tablespoon orange juice
  • cocoa - 1 tablespoon + 1 tablespoon for sprinkling
  • coffee - 1 tsp ground, by choice
  • orange juice - 2 2/3 tbsp (40 ml), for the syrup
  • liqueur - 1 tablespoon, orange
  • sugar - 2 tablespoons
  • honey - 1 tsp
  • butter - 1 tablespoon

How to make

Melt the chocolate in a water bath. Beat the butter with the sugar until graying and add the eggs one at a time. Once beaten well, add the cream and the sifted flour with baking powder. Beat well and divide it into 2 parts.

To one part, mix in the 2 oz (50 g) of melted chocolate, 1 tablespoon of cocoa, the coffee and orange juice. Add orange zest to the other part. Preheat the oven to 350°F (175 °C). In a greased and floured tray or cake pan, start arranging as follows - light mixture, dark mixture, sprinkle lightly with cocoa, followed by the dark and then light parts of dough again.

Take a skewer and begin stirring in a circular motion in the mixture, all the way through to its bottom to mix the two parts gently. Bake the cake for about 45-50 minutes, checking its readiness with a stick.

Leave the finished cake to cool slightly and top it with the melted 2 oz (50 g) chocolate, 1 tablespoon butter and 1 teaspoon honey.
