"Once fresh spinach hits the markets, I`m gonna whip up fritters that`ll blow your mind."

Ingredients

  • eggs - 2
  • sugar - 2 tablespoons
  • salt - 1 tsp
  • yoghurt - 1 cup (250 g)
  • baking soda - 1 tsp
  • flour - 2 - 3 cups
  • oil - for frying
  • for the filling
  • spinach - 10.5 oz (300 g)
  • cottage cheese - as needed
  • spices - by choice

How to make

Blanch the pre-cleaned spinach in boiling water, drain it well and chop it finely. Mix the cottage cheese and add a little salt, black pepper and other spices to taste. The filling should not be runny.

Beat the eggs with the sugar, add the yoghurt with the baking soda dissolved in it. Add the sifted flour in parts. Knead a soft dough, rolling it out on a floured counter. Cut pieces twice as large as the final buns’ size that you would like. In the middle, put a spoonful of the filling and fold by pinching the edges together nicely.

Immediately drop them to fry in highly preheated oil on both sides. Drain the finished fritters with spinach on paper towels.

This is a recipe I got from my grandmother who makes them with different fillings (it is important not to be runny) and even without filling.
