Ingredients

  • pork - 4.5 lb (2 kg) whole piece of loin
  • garlic - 1 tsp, powdered
  • salt - 1 teaspoon
  • black pepper - 1 tsp, freshly ground
  • for the stuffing
  • spinach - 7 oz (200 g) frozen, then thawed and well drained
  • dill - 1/2 bunch, finely chopped
  • cream cheese - 2/5 cup (100 g)
  • blue cheese - 1/2 cup, crumbled
  • dijon mustard – 1 1/2 tablespoons
  • oregano - 1 tsp, dry
  • basil - 2 tsp, dry
  • black pepper - 2 tsp, dry
  • green onions - 1/2 cup, finely chopped
  • bacon - 3 - 4 slices, finely chopped
  • walnuts - 1/4 cup, chopped

Preparation

Combine all the ingredients for the stuffing in a suitable container and stir well. Cut the pork into 2 lengthwise, so as to obtain a large piece with a thickness of 1 1/2″ (4 cm). Distribute the filling along the surface of the meat, wrap it into a roll and hold it firmly together with thick thread.

Place the roll in a greased tray, sprinkle it with salt, pepper and garlic powder. Bake for about an hour in a preheated 356°F (180 °C) oven.

Let the cooked roll cool slightly, then serve it cut into pieces and garnished with dill.
