Ingredients

  • for the dough
  • brown sugar - 1/2 cup
  • semolina - 2 lb (1 kg)
  • flour - 1 cup
  • oil - 1 cup
  • vanilla - 1 capsule
  • baking powder - 1 packet
  • oranges - zest of 1
  • water - 1 1/2 cups, cool, or use soya milk
  • for the filling
  • walnuts - 1 cup crushed
  • cinnamon - 1 tsp
  • brown sugar - 2 - 3 tablespoons
  • fruits - 2 cups cherries, pitted and chopped + some more for the decoration, optional
  • oil - 1 tablespoon

Preparation

Mix the semolina, sugar and flour with the oil, vanilla, baking powder, orange zest and water and mix a dough. Cover it and let it sit for 30 minutes. Meanwhile, pit the cherries and chop them finely. Mix them with the sugar and put them on the stove with 1 tablespoon oil to saute briefly.

Remove and mix with the cinnamon and crushed walnuts (or other nuts). Arrange a large towel on the counter with a piece of baking paper. Spread out the dough in a square on it, 1/2″ (1 cm) thick. Smear the filling evenly on top and using the towel, carefully roll it up, then finally, remove the paper.

Transfer it into a tray with baking paper and place in a preheated 356°F (180 °C) oven to bake for about 35-40 minutes. Another option is to cut the roll into 2″ (5 cm) thick pieces and arrange them in a tray with baking paper. Bake them in a preheated 356°F (180 °C) oven for about 25 minutes or until nicely browned.

Sprinkle the finished roll with powdered sugar, ground nuts and decorate with fruits, which you can jelly if desired.find similar recipes here
