  • eggs - 8 yolks
  • sugar - 4/5 cup (200 g)
  • lemon juice - of 1 lemon
  • orange juice - of 1 orange + the peel
  • flour - 1 tablespoon
  • white wine - 1 cup (250 ml)


Beat the egg yolks with the sugar and strained lemon and orange juice. Add the grated orange peel, flour and wine and beat the mixture in a water bath on the stove until thickened.

Remove and whip until cool. Mix in the egg whites beaten into snow. Distribute the cream into bowls and make a decoration of fruits, nuts or jam.find similar recipes here
