Ingredients

  • chicken - 1 chicken with the giblets
  • bread - 5 slices, dry
  • garlic - 2 cloves
  • butter - 2 tablespoons
  • white wine - 3 1/3 tbsp (50 ml)
  • parsley - 2 tablespoons chopped
  • potatoes - 4 medium
  • carrots - 3
  • salt
  • black pepper
  • marjoram - 1 - 2 tsp
  • ketchup - 1 tablespoon
  • olive oil - 1 tablespoon

How to make

Clean the chicken and put it to boil until half cooked. Remove its giblets and chop them finely. Heat 1 tablespoon of butter in a pan and put the finely chopped garlic to fry, and right after, add the giblets. Spice them with salt and black pepper.

Make bread into crumbs by hand or by using a food processor. Mix them with the fried offal, along with their fat, the second tablespoon of melted butter, the parsley and white wine. Spice again with pepper, salt and marjoram. Fill the chicken with this stuffing and sew it up.

Cut the cleaned potatoes and carrots into pieces and put them into a greased tray, season once more with salt, pepper and marjoram. On top, place the stuffed chicken and smear it with a mixture of the olive oil and ketchup. Add about 1 cup of warm water.

Cover the tray with foil and make a tiny hole with a skewer for the steam to escape. Put the dish to bake for about 1 hour. In the last 10 minutes, remove the foil and bake until it gets an appetizing tan.
