Ingredients

  • broad beans - 1 cup (250 g)
  • potatoes - 17.5 oz (500 g)
  • zucchini - 1
  • olive oil - 2/5 cup (100 ml)
  • salt
  • black pepper
  • mustard - 1 tablespoon
  • curry - 1/2 tsp
  • soya sauce - 4 tablespoons
  • green onions - 1 sprig

How to make

Clean the potatoes and put them to boil until half cooked. Cool them, peel them and cut them into cubes. Roll them in salt, black pepper, a little mustard and curry. Slice the zucchini into thin pieces and clean the broad beans.

Blanch the broad beans for a few minutes in boiling water and then rinse them under cold. Heat the oil in a deep pan and add the potatoes. Stir and let them fry until lightly browned.

Then add the zucchini and broad beans and pour on the soya sauce. Saute everything for 5-10 minutes and remove the lid. Add spices to taste and leave on the stove until the liquid boils off.

Serve the broad beans and potatoes with chopped onions.
