Ingredients

  • eggs - 8
  • milk - 4 1/5 cups (1 liter)
  • sugar - 1 1/5 cups (300 g)
  • lemons - zest of 1
  • vanilla - 1 packet
  • cherries - 17.5 oz (500 g) canned, or sour cherries
  • breadcrumbs - 1/2 cup

How to make

Beat the eggs, sugar and milk. Add the grated lemon rind, vanilla and breadcrumbs.

Pour the mixture into a greased deep baking tray and arrange the drained cherries (pitted) on top. Bake the fruit pudding at 390°F (200 °C) until browned and set.

Once cool, sprinkle it with powdered sugar if desired.
