"A soup containing all the good things that spring has to offer, including all the aromas of spring waking up from its long slumber."

Ingredients

  • green onions - 1 bunch
  • parsley - 1 bunch
  • spearmint - 1 bunch
  • dill - 1/2 bunch
  • green garlic - 2 - 3 sprigs
  • margarine - 4 tablespoon, or oil
  • flour - 3 tablespoons
  • eggs - 1
  • yoghurt - 1 cup
  • salt
  • black pepper

How to make

Chop the onion finely and saute it in the margarine. Add the flour and fry until golden.

Add 6 1/5 cups (1.5 L) of water and the chopped garlic, parsley, dill and spearmint. Boil for about 20 minutes.

Sprinkle it with salt, pepper and thicken with the egg beaten with the yoghurt.
