Arrange the lettuce or cabbage in a large plate. Halve the tomatoes and remove the soft inside parts. Crumble the eggs, season them with a little olive oil, salt and pepper and stuff them in the tomatoes.

Arrange the stuffed tomatoes on a plate, cover with plenty of grated cheddar and serve the appetizer garnished with lots of parsley.find similar recipes here
